Soda bread is served at nearly every meal in Ireland, and every baker has his or her own version. Mine is based on my grandmother’s recipe and includes white whole-wheat flour (an easy-to-love, mild-tasting whole wheat), cold grated butter, buttermilk, and thyme. If you can’t find white whole-wheat flour, use equal parts of all-purpose and whole-wheat flours. Instead of baking this recipe as one large loaf, which takes an hour or more, I divvy up the batter into little rolls to expedite things
